This slaw is also great for lunches and dinners. Serve with a side of rice and grilled chicken, fish or tofu. For an East-Asain inspired flavour substitute the olive oil and lemon for sesame oil and rice wine vinegar.
If you want to go the extra mile, my favourite way to eat this is with sushi rice and chicken-katsu (panko crumbed chicken), topped with kewpie mayo and sticky teriyaki sauce.
If you're looking to shake up your usual breakfast routine, this Avocado Toast with Green Apple and Pickled Ginger will make you want to do a happy dance for how delicious it is.
This recipe pairs beautifully with soft-boiled eggs for breakfast. However, if you want to spice things up with the slaw, try subbing the olive oil and lemon for sesame oil and rice wine vinegar, and serve with grilled chicken, fish or tofu and a side of rice for a flavourful and easy lunch or dinner.
Method
Step 1
If eating with eggs, begin by boiling them to your desired consistency. While the eggs are boiling, complete the steps below.
Step 2
Using a mandoline or knife thinly slice the cucumber and green apple into thin rounds and then again into very thin matchsticks. Add to a large bowl. Squeeze in the juice of half a lemon and mix to stop the apple from browning.
Step 3
Pick and roughly chop the mint leaves, and then drain and roughly slice the pickled ginger into smaller pieces. Add to the bowl with the apple and mint.
Step 4
Mix everything together with a pour of olive oil, adding salt and pepper to taste. Adjust lemon, oil, salt and pepper to your liking.
Step 5
Toast and spread smashed avocado on the sourdough slices. Top with the apple, mint, and cucumber mixture. If eating with eggs, peel and serve these on the side.
Helpful tips
What can I use if I don't have a mandoline for slicing the apple and cucumber?
If you don't have a mandoline, a sharp knife will work just fine for slicing the apple and cucumber. Aim to slice as thinly as possible to retain the light, crunchy texture you would achieve with a mandoline. Take your time and slice carefully. Alternatively, a vegetable peeler could be used for ultra-thin slices, though this might make them softer and less crisp.
Can I prepare the apple and cucumber mixture in advance?
This is best made fresh to prevent the ingredients from becoming too soft and watery. However, it's very easy and quick to prepare so won't take much time or effort!
What's a good way to cook the eggs if I want to include them?
If you're including eggs with your avo toast, a quick and versatile method is to boil them. Start by placing the eggs in a pot of cold water, bring them to a boil, then reduce the heat and simmer. For soft-boiled eggs, aim for 6-7 minutes. If you prefer hard-boiled eggs, 9-12 minutes is ideal. Once done, transfer them to an ice bath to stop the cooking process and make peeling easier.
How can I make this dish more filling?
For a complete breakfast that will keep you satisfied for longer, consider eating it with boiled eggs. Alternatively, you can serve it with smoked fish, cooked bacon, or tofu.
