Grilled chilli lime prawns

Ingredients

For the prawns:

  • 1 kg green prawns, in their shells
  • 1 lime, juiced and zested
  • 1 tsp chilli powder, or to taste
  • 1 tbsp sunflower oil
  • 1 tsp salt
  • 1 tbsp honey

For the grill:

  • 1 – 2 limes, cut in half

Chilli Lime Mayo:

  • 1/3 cup whole egg mayonnaise
  • 1 tbsp sriracha
  • 1/2 tsp salt
  • 1/2 tsp white pepper
  • 1 lime, zested and juiced

Method

Step 1

In a mixing bowl combine the lime juice and zest with the oil, chilli powder, salt and honey.

Step 2

Remove the head, legs and shells of the prawns, keeping the tail attached. De-vein the prawns then add to the marinade and very gently mix.

Step 3

Heat the BBQ, grill plate or hot fry pan, add a little oil and sear the prawns on each side for 2 minutes, or until pink and cooked through.

Step 4

Cut a lime in half, brush with oil and sear it face down for a few minutes or until charred.

Step 5

Combine the mayonnaise, sriracha, salt, white pepper, lime zest and juice in a small mixing bowl. Taste and add more sriracha or salt if needed. Transfer to ramekin and serve with the grilled prawns and charred limes.

How long do leftovers last?

Leftovers will last for 3 days in the fridge. However, put them into the fridge as soon as possible after the meal. Make yourself a prawn roll the next day with leftover prawns, leftover chilli mayo and some lettuce leaves.

Is there an alternative way to cook the prawns without grilling?

Certainly! If you don't have access to a grill, a hot fry pan or wok can work just as well. The key is to use high heat to quickly sear the prawns, ensuring they are cooked through and acquire a slight char. You can follow the same cooking time of about 2 minutes on each side, just make sure your pan is hot enough for a quick cook.

How can I tell if the prawns are cooked through?

When grilling prawns, you’ll know they’re cooked when they turn a lovely pink color and the flesh becomes opaque. It's a quick process, taking only 2 minutes on each side. Overcooking can result in rubbery prawns, so keep a close eye on their colour and texture to ensure they remain juicy and tender.

Yes, you can prepare the prawns ahead of time by marinating them a few hours before you plan to cook them. Simply follow the steps to marinate the prawns and then store them in the refrigerator. When ready to cook, take them out of the fridge and proceed with grilling. This will allow the flavors to deepen, making your prawns even more delicious.
