Ingredients

  • 300 g green beans
  • 1 tsp olive oil
  • 1 tbsp chilli paste
  • 1/2 tbsp soy sauce
  • 2 tbsp sesame seeds, toasted

Make sure the pan is nice and hot before adding the green beans to get a nice char without overcooking them. Then turn down the heat before adding the soy sauce and chilli paste to create a nice sticky sauce and avoid burning it.

Method

Step 1

Remove tops from the green beans and place them in a medium sized bowl. Add the olive oil and season with salt and pepper, then toss to coat well.

Step 2

Heat a frypan over medium heat. Once nice and hot, add the green beans, shaking every now and then until they are a little tender and starting to char.

Step 3

Reduce the heat to low, add in chilli paste and soy sauce and cook for 30 seconds until beans are sticky and delicious.

Step 4

Turn off the heat and transfer to serving plate. Sprinkle with toasted sesame seeds and more salt and pepper if needed.

What can I use as a substitute for chilli paste?

If you don't have chilli paste, you can substitute it with Sriracha, red pepper flakes, or even a bit of harissa. Adjust the quantity to your taste, as these alternatives might have different levels of heat. IF you don't like chilli, you can leave it out and add a tablespoon of oyster or hoisin sauce instead.

What can I serve with these green beans to make it a complete meal?

These green beans are a perfect side with grilled chicken, fish, or tofu. They work with noodles dishes or on rice bowls with a fried egg.

How do I toast sesame seeds?

It's great to have a jar of toasted sesame seed on hand to sprinkle over sautéed greens, salads, rice or over avocado on toast. Preheat oven to 160 degrees, spread 1/2 a cup of sesame seeds onto a flat baking tray and toast in the oven for 10 minutes. Be careful not to over-toast, as sesame seeds can burn quickly. Shake the tray and then toast for another 5 minutes or until seeds are golden. Remove from the oven and allow to cool completely before transferring to a clean dry jar. Toasted seeds will last for up to a month if stored in a dry container in the pantry.
