Roasting fruits not only disguises any imperfections, it also intensifies the flavour. While you can make these with grapes you’ve just bought, it's a great way to use up the ones that have been sitting in the back of the fridge for a few weeks. Once roasted, they are rich, tangy, sweet, and salty, and an excellent addition to salads and slaws, or served with roasted meats, the Christmas ham, or cheese and crackers.
Method
Step 1
Preheat the oven to 200 degrees. Line a baking tray with baking paper.
Step 2
Put the grapes, either individually or in small clusters attached to the stem, into a medium sized bowl and coat with apple cider vinegar, brown sugar and olive oil. Add salt, freshly ground black pepper and chilli flakes.
Step 3
Spread the grapes onto the tray and roast in oven for 15 minutes until they start to wrinkle or split. Shake the pan every 5 minutes or so to stop the grapes from sticking and to coat them in the juices.
Step 4
Remove from the oven and allow to cool. Arrange grapes on a serving plate with cheese and crackers, or store in a container in the fridge for up to 1 week.

You'll know the grapes are perfectly roasted when they've started to wrinkle or split, and they become slightly caramelized. This usually takes about 15 minutes in a 200-degree oven. Keep the oven hot so the fruit roasts quickly rather than stews. If the fruit is very ripe, drain some of the juices off halfway through the cook time and roast again.
